our roots: A Journey from Garden to Gourmet

I'm Tim Kavarnos, a simple soul with a penchant for the extraordinary. My journey into the world of flavors began in a small town and a backyard garden. It was there, between rows of Bulgarian Carrot Chili, Mirasol, and my beloved Habanero peppers, that I discovered my passion for the fiery kiss of hot spices and the symphony of flavors they could create.

Working behind the bar and in the dining rooms of some of New York City's finest establishments, I encountered a plethora of hot sauces. Yet, none resonated with my desire for a sauce that was fiery without being overpowered by vinegar – a sauce that would complement, not dominate, the dish it graced.

Inspired by my garden's bounty and the diverse culinary and cultural landscape of the city, I embarked on a quest to create such a sauce. After numerous trials and errors, the perfect blend emerged: a sauce with just the right amount of heat, infused with a complex flavor profile that stood up to any dish, enhancing rather than overshadowing it.

The response was overwhelming. Friends and colleagues couldn't get enough, and what started as a personal project quickly grew into the Salamander Sauce Company. Committed to quality and freshness, I partnered with a co-packer who shared my values, sourcing fresh local produce from small farms to craft our sauces in small batches.

The name Salamander Sauce pays homage to the mythical creature known for its ability to dance through flames unscathed, much like how the flavors of our sauces navigate the heat. Today, Salamander Sauce offers a line of sauces that promise to be a staple in any meal, beloved for their fiery yet flavorful character.
