Search around and you'll find a blunt rule of thumb: sauces with vegetables or fruit, like carrots and tomatoes, must be refrigerated. It's aimed at the wrong target, but it's not wrong to worry. Heat and direct sun speed up the fade of aroma and color, so the spot above the stove and the sunny windowsill are the two worst places in the kitchen.
