What makes a hot sauce good isn't one thing. Taste, texture, consistency, how the heat sits: they all play a part, and how much weight you give each one is up to you. For me, good is heat and flavor pulling in the same direction: not two things stacked on top of each other, but one thing built from real ingredients.
That's not something I can hand you a checklist for. What I can walk you through is what's underneath all four of those: what the sauce is actually built from. That's not a fifth thing to weigh alongside taste and heat, it's what produces them.
I build mine from whole vegetables and fruit instead of vinegar and water. This is that mechanism: what it takes to build a sauce that comes together, and what changes when you don't.

I did, over years in New York restaurants: high-end places where I learned what real flavor tastes like, and bars where I learned how the right sauce can take the meal to another level. Eventually I started making my own, in a Brooklyn kitchen, over 15 years ago. What follows is the mechanism behind that: what it actually takes to build a sauce's flavor from real food.

The Build Mechanism
The base is the sauce. When whole vegetables or fruit come first, they cook down and give the sauce body on their own: that's not a metaphor, it's pectin, the same thing that thickens a fruit preserve without added starch. When vinegar and water come first, there's not enough there to cook down, so the body and a lot of the flavor have to come from somewhere else: salt, spices, sometimes a thickener. Neither approach hides what it's doing; it's all right there on the label if you read for it. But they're not the same mechanism, and they don't produce the same sauce.

Which peppers go into that base is its own build decision, not just a heat setting. Jalapeño gives a quick, bright hit up front; habanero comes in slower, with more going on underneath. Vinegar didn't become the industry standard because it was cheap. It became standard because, for more than a century, it was the one method that reliably kept sauce safe, proven the hard way before anyone understood why. Sodium as a Build Consequence
This one surprised me. When I was developing the recipe, I wasn't chasing a sodium number, I was chasing flavor. The low number showed up on its own, and once I understood why, it made sense: salt's job is the same in any sauce, it brings forward whatever flavor is already there. In a whole-vegetable base, there's already a lot there for it to bring forward, so it doesn't take much. Vinegar-forward sauces tend to run higher in sodium for the flip side of that same reason: with less underneath it, salt is doing more of the work of surfacing the flavors behind the vinegar.
